You can freeze macaron shells for around two months. Also, some of the macaron shells can be frozen for an even longer duration. After this time, the shells may start to lose their freshness. If you only need to store the macarons in the fridge overnight, you can use a baking tray with a Half Sheet Lid as a temporary protective option. However, this method is not recommended because it won’t provide sufficient protection.

When in doubt, always opt for the airtight container. This container will save the macarons from getting freezer burned. Moreover, it will also prevent macarons from drying out in the fridge.

Can macarons stay fresh out of the fridge?

Macarons should not be left out of the fridge for extended periods. Moreover, you can put them out of stay for a maximum of up to 2 hours. However, these two hours also depend upon the filling of macarons. For instance, if you have used a filling that contains cream-based ganaches, buttercream with milk, or caramel sauce cooked with cream then these ingredients are not shelf stable.
